Chicken Fajitas

As your schedule picks up for fall, we know you are probably looking to save time planning family meals. This chicken fajitas recipe uses a slow cooker, which helps you put a healthy dinner on the table without spending hours in the kitchen.

INGREDIENTS:

1 lb of chicken breast

3 bell peppers (green, red, and yellow), sliced

1 onion, sliced

1 package of taco seasoning

Tortillas

Toppings of choice (rice, beans, cheese, guacamole, sour cream, etc.)

INSTRUCTIONS:

Slice peppers and onions and place them at the bottom of the slow cooker, followed by the chicken breasts.

Sprinkle taco seasoning on top. Set to cook on low for 6 to 8 hours (or on high for 3 to 4 hours).Remove the chicken breasts and shred the meat.

Mix the chicken back in the cooker, being sure to incorporate the liquid from the peppers and onions.

Serve with tortillas and your toppings of choice

Tip: Use the leftovers for your lunch … chicken quesadillas anyone?
