The good news about hangouts being virtual these days? You get to keep all of the snacks for yourself! It’s imperative to start my prep with a comfy outfit as I get my baked goods together…and because I always make a mess in the kitchen! I chose the ATC Kickback Jogger and Tee topped with the Diary Necklace to dress it up. And the night’s treat of choice? Gluten free and low carb chocolate chip cookies! I’ve been trying to perfect my low carb cookie for quite some time and I think I finally did it! Try it out:

My Low-Carb Chocolate Chip Cookies:
Ingredients:

½ cup butter (room temperature)
½ cup Stevia
½ cup Swerve Brown Sugar Replacement
1 teaspoon vanilla
1 ½ cups super fine almond flour or meal
½ teaspoon baking soda
½ teaspoon salt
⅛ teaspoon psyllium husk
1 egg
¾ cup Lily’s Semi-Sweet Chocolate Baking Chips

Here’s my Amazon shopping list to find some of these low-carb baking items!

Instructions:

1. Pre-heat oven to 325º F.
2. Mix together the butter, Stevia, Swerve, and vanilla until completely blended.
3. Add the almond flour, baking soda, salt, and psyllium husk until combined.
4. Lightly whisk the egg and then combine with the rest of the ingredients. Then fold in the chocolate chips.
5. Use an ice cream scoop or spoon to put the dough on a greased cookie sheet. Bake for 8-10 minutes but be careful not to overbake—cookies should still be very soft and not browning.

Let the cookies sit for at least 5 minutes (almond meal is more likely to fall apart). Enjoy!

Do you have any recipes you’d recommend?

Once the cookies are prepped and ready, it’s time to choose an outfit! I have an affinity for blazers (it might be the business owner in me) and I always have trouble choosing which one to go with! But for a virtual girls’ night, the Checkup Blazer is a no-brainer.The soft material makes it feel as cozy as your favorite sweatshirt while still making you look perfectly chic! I completed my look with the Higher Straight jean, All-Purpose Cami, and my past-season cabi loafers before heading to my home office.

After I’ve chosen my outfit, I like to touch up my hair and makeup accordingly. For this piece, I decided on sleek straight hair, a dark lip, bold eyes, and a dewy highlight. With video calls, I’ve noticed that my makeup tends to disappear a bit through the camera, so I try to put it on a little heavier than usual.

Now, I’m no makeup guru (I love some inexpensive finds!), but here are my top picks to easily touch up an evening look:

Urban Decay Born To Run Eyeshadow Palette
wet n wild – MegaGlo Makeup Stick
L’Oréal – Lash Paradise Washable Mascara

Hair and makeup ready means it’s time to get the night started! Cheers to a safe and stylish evening!
