School Lunch Recipe: Tomato Soup

For many, Labor Day is the end of picnic season and the beginning of the school year. To help you make the transition easier, plan your kids’ school lunches ahead of time to ease the stress of the change in routine.  What’s your kid’s favorite school lunch? TOTAL TIME: 15 minutes


1 (28-ounce) can whole tomatoes, in juice

1 rib celery, roughly chopped

1 cup low-sodium chicken broth

Kosher salt and freshly ground black pepper

1 tablespoon pure maple syrup

1 to 2 teaspoons fresh lemon juice

1/4 to 1/3 cup cream


Puree the tomatoes, celery and broth in a blender until smooth.

Add lemon juice and maple syrup. Stir in cream. Season to taste with salt and pepper.

Transfer to a microwave safe bowl. Heat in microwave on HIGH, for about 4 minutes, or until warmed through.

Pour hot soup into an air-tight thermos.

Tip: A mini grilled cheese sandwich makes the perfect side dish!
